B-E-A-utiful day!oeasyse

It was beautiful weather day...like perfection. The kind of day you just want to lay on a blanket under the sun in a cozy long sleeved tee with a good pair of kaki shorts and tennis shoes (cute earring and hair done with a poof of course to off set the casual outfit...my idea of the perfect spring outfit...if you switch up the tennis shoes for rainbows...anyways).

It was nice - so we sat outside and played in the backyard.
And the springy weather made me crave a good chicken sandwich...and thanks to one of my best friends in college, Meredith, I learned how to make a PERFECT simple chicken salad during one of our many spring break trips to Florida. I still make it and LOVE it! You should to...it is soooo easy!

Ingredients (or as Pioneer Woman calls them...the Cast of Characters!)
  • Shredded Chicken (i had a breast and a half of chicken left over from a dinner this week, so I threw them in the oven with salt, pepper & olive oil and cooked for 25 min)
  • 1/2 red onion chopped
  • several grapes cut up (red or green will do)
  • any kind of nut (almonts, pecan, walnuts)...p.s. - i am not a "nut" girl, but i like slivered almonds in this!!
  • mayo
  • relish
  • sugar / sweetener
  • salt & peppa
Then you just mix it all together. Use as much or as little as all of the ingredients. Watch out on the mayo though...a little goes a long way and I honestly probably squirt in NO MORE than two tablespoons. And the sugar? Yes, add it. Trust me...no, trust Meredith!
Mmmm....made for a yummy dinner while the husband is away :). Went very well with my sweet tea!

I want to eat Knox. I love that boy!

I make the same chicken salad but I use celery in place of the onions because I don't like raw onions. It also gives it a little extra crunch. It is my family's favorite!

pretty jealous that you get to drink sweet tea ( aka caffeine) before bed..The vices of breast-feeding kill me!

PS I can't wait for the babes to get together...Lily Bleu already has a crush on Knox..wouldn't their names look smashing together?

Ashley - um, i would have never survived my pregnancy and breastfeeding without CAFFEINE FREE!!! And now we still make it with decaffeinated tea bags!!
